dried shrimp water eggs vegetable oil scallions, thinly sliced including white parts (root removed) salt white pepper
Instructions
Step 1
In a bowl, combine the dried shrimp and water. Let the shrimp soak for 5 minutes.

Step 2
Prep the steamer. Place a trivet in a large pan and add enough water to reach the trivet. Place a shallow heatproof bowl on the trivet and cover the pan with a lid. Turn the heat on high and bring the water to a boil.

Step 3
In a separate bowl, add the eggs and whisk well. Add the dried shrimp and water mixture, vegetable oil, and half of the scallions. Season with salt and white pepper. Mix well.

Step 4
Pour the egg mixture into the bowl in the steamer pan. Cover the pan with the lid.

Step 5
Steam the egg on high heat for 2 minutes, then lower the heat to low-medium so the water simmers for another 4 to 5 minutes or until the egg is completely cooked. (The egg is cooked when the center does not move when the bowl is tilted.)

Step 6
Carefully remove the bowl from the pan. Sprinkle remaining scallions over the steamed egg and serve.
