Peel eggs and cut into quarters. Place on a plate.
In a small bowl, combine soy sauce, oyster sauce, sesame oil, garlic, and ginger. Pour over the eggs.
Sprinkle chopped green onions on top. Warm oil in a small saucepan and pour over the eggs.
*Add chopped chili peppers in the sauce or sprinkle them on top of the eggs to add spice to taste.
*If sweet soy sauce is unavailable, mix light soy sauce, dark soy sauce and sugar together for similar taste and texture.
* For convenience and to save time, use minced garlic and ginger from a jar.
